On my plate and in my cup...

In my attempt to be healthy, I've found a couple of things that I just love, so I thought I'd share.  Maybe you will like them too!

Almond milk hot chocolate!  I'm telling you, this is so delicious!  It's smooth and slightly thick, so it feels like you are being super indulgent. 



ALMOND MILK HOT CHOCOLATE

1 1/2 cups unsweetened almond milk
1 1/2 Tbsp. unsweetened cocoa powder (more or less, depending on your taste)
1 tsp. honey, sugar or sugar free sweetener (to taste)
1/2 tsp. pure vanilla extract
1 pinch ground cinnamon
1 pinch salt

Heat the almond milk over a medium heat in a small saucepan.  Add remaining ingredients and bring to a low boil, then simmer for 2 minutes and season to taste with cinnamon and salt.  Serve immediately with whipped cream. 

This is such a warm comforting drink in the morning, or at the end of the day, and it doesn't make me feel too full like hot chocolate made with milk.  The almond milk is so good for you, and the cocoa powder is just packed full of antioxidants, and this drink is very low in calories...win, win!!
I really love a good salad, but it has to be substantial to make it feel like a meal...this is my favorite taco salad.  



It's super simple, just put a big scoop of cold chili (it's better than it sounds) and beans on the lettuce, add tomatoes, sprouts, cilantro, plain Greek yogurt and a few big squirts of Sriracha sauce....yum!!     I also like olives, chopped green onions, salsa, left over taco meat, ranch dressing and oven baked tortilla chips...just use your imagination and what's in your fridge!

It's hard trying to make healthy meals when you are cooking for two, so I'm always trying new recipes, or re-vamping old ones.  I'm not so sure my husband loves it, but he's not a complainer, and he usually just eats whatever I put on the table.  What are some of  your favorite healthy meals?

Just me so I only have to please myself and, believe me, I take it easy on meal preps. Simple. Your almond milk sounds delicious...wish that I could use it, but because of nut allergies, I must take it carefully. I might still try one if I were out, but it would be a waste to have it at home. My sister is able to use it and loves it.

Got to love a husband who doesn't complain about your cooking, especially when experimenting.
Cold chili? That's a first but I'm going to try it!!!

Your salad and hot cocoa sound wonderful Barb! I am really going to give that hot cocoa a go. I want to make my own Toasted Coconut Almond milk. I found a recipe. Will let you know how it goes. I am hopeless at dieting. I fail every time. I eat on a sandwich plate. Have done for years. Its less food but looks like more. Hi Barb, I too am trying to get healthier, thank you for these recipes, you are right it is hard to cook healthy for two, and like your dh, my dh is not hard to please.
I read your last post and was so touched by you sharing the memories of your parents, I too have old 78's and enjoy them, I got my turntable for Christmas last year and love it. I will hopefully share on my blog some time.

Wow Barb that hot chocolate looks absolutely amazing!! Yep thats gonna be in my cue when I'm ready for a good cup of yummy! I do love a good taco salad and I gotta say, I never thought about putting Greek Yogurt on one. Your just full of good ideas!!
