Fries and gravy please . . .


I am trying to eat healthy, HEALTHY, HEALTHY, It's sooooooo hard!!!!!  But, I am determined to try as hard as possible to fix and eat healthy meals.   How many of you remember going to a cafe and ordering fries and gravy?  No one . . .well maybe it's an Idaho thing, but I remember, and I loved them!  That's what this meal reminds me of - fries and gravy in a greasy spoon!  The good thing about it, is it's healthy and delicious and definitely not greasy.

Burgers and Onion Gravy

1.5 lbs extra lean ground beef or ground turkey breast
1 1/2 tsp. Italian seasoning
1/2 - 1 tsp. garlic powder or 1-2 fresh garlic cloves, minced
6 Tbls. bread crumbs (I used Panko)
1 can beef broth (I used Swansons)  Add 1/4 cup to meat mixture, save the rest for gravy.
1/2 - 1 cup water
2 Tbls. cornstarch
Salt and pepper to taste.
Large onion, sliced

Mix together and make into 6 patties.  Brown on both sides in a non-stick pan on medium high heat.  Add onions - Should look something like this:

When onions are golden and deliciously tender, mix together the rest of the beef broth, 2 Tbls. cornstarch and about 1 cup water.  Shake vigorously in a jar or stir until all of the cornstarch is dissolved.  Take the patties out of the pan and set aside.  Add the broth and water mixture back into the pan with the onions and stir until thickened, adding water until you get the consistency you like.  Add the patties back into the pan with the gravy.  Should look something like this -  yummy! 


Cover and let this simmer on low while the oven fries bake.  I promise, this will smell so good cooking, your mouth will water!

Oven Fries

3 large baking potatoes or sweet potatoes (I use one for each person)
2 tsp. olive oil
1-2 tsp. steak seasoning or whatever seasoning you like

Scrub the potatoes and cut into wedges, put in a bag or large bowl and mix with the olive oil and seasoning.  Place on a large baking sheet in a single layer.  Should look like this:

 
Bake on 475 degrees until they are tender and golden brown, about 30 min., turning every so often.  Salt and pepper as desired. 

 
These are so good!  Serve with gravy and enjoy!


It is hard to find really good, healthy recipes using ground beef for some reason.  I have a husband who is a meat and potatoes kind of guy, so this recipe really hit the spot for him.  It is my own concoction, so if you have any questions, please let me know.  

If you are following Weight Watchers, one beef patty and about 1/2 cup of gravy is about 7 points.  If you use ground turkey, it's about 5 points.  One serving of fries is 4 points.  If we have to eat healthy, it might as well taste good!

No, I never ordered fries with gravy. I remember others doing it, tho.

Packrat - If you have not had fries and gravy, you really should try this - don't have the kind at the cafe, they are loaded with fat!! Hugs and go try this!

Yes Hon, it issssssssss hard. If it's a real/new change.

But I've been cutting Sat/Fat out of my food, for a year now. After the near heart attack and stenting last March, I actually CAN NOT eat Sat/Fat.

So I guess the message is -- It may get easier with time. Or..... Get 3 nearly clogged coronary arteries! Escaping a massive heart attack, will make it easier, for sure. :-)

But no one wants to do that! But when you eat healthy, remember that you are cheating a heart attack too! Yessssssss!!!

Val - I love your recipes too! Eating healthy is going to be hard, but necessary to be around to hug sweet little babies! Love you.

Aunt - You always have such good advise! Yes, this is a real change, something I have to do for me and my dear husband.

I'm so glad you are ok, what a scare! I'm so glad you are taking care of yourself! I really need to take care of my heart too, so I will make the changes I need to, to have a healthier diet and lifestyle. Thanks for the encouragement, I will no doubt need more in the future! OXOX
