I think it's nice to make everyday dishes that are warm and familiar. This is the first cake I made for my husband after we got married, over 36 years ago. It's an easy, "go to" cake, because I always have the ingredients on hand. It's so good with ice cream or just like it is with a tall glass of ice cold milk! Enjoy
Oatmeal Cake
Mix 1 C Oatmeal with 1-1/2 C boiling water. Cut one stick of butter into small pieces and mix into the oatmeal mixture and Let stand 15 minutes, until the butter is melted and the mixture is cool.
Mix together:
1 C brown sugar
1 C white sugar
2 eggs
Add cooled oatmeal and mix.
Sift together and add:
1-1/2 C flour
1 tsp baking soda
1 tsp cinnamon
½ tsp nutmeg
½ tsp salt
Mix well. Spread evenly in a 9x13 baking pan. Bake 25 to 30 minutes, or until done, in a 350 degree oven.
Topping
1 C brown sugar
6 Tbsp milk or light cream
½ cube (1/4 C) butter
Cook slow for 5-6 minutes. Remove from heat and add:
1 C coconut
¾ C chopped nuts (optional)
spread on top of warm cake and broil until golden brown.
