Garden of Eatin' . . .

Last night my son sent us a photo of their garden...oh my goodness, it was beautiful!  It had been a while since we were at their house, so we got in the car and off we went to see this beautiful garden of eatin'! They just bought their home last fall, so this is the first year they have had a garden.  I could not believe how big it was - just gorgeous, and I was the lucky recipient of, cucumbers, zucchini, beets and a beautiful red onion!




 Of course this morning I made cucumber salad, yum!  I don't know about you, but this has always been a staple in our house during the summer, we love it.

Cucumber Salad

2-4 cucumbers depending on how big they are
1 large onion
1 cup vinegar (I like apple cider vinegar)
3/4 cup sugar
salt and pepper to taste

Mix together and enjoy!  I always put in more onion, because that's just how I roll!

I couldn't resist these fun photos of, Brody with his cat, Mr. Meowgee.  This guy was a stray, who adopted them and they fell in love with him.  I would say he is brody's cat . . . they speak the same language.




Of course I couldn't resist taking a picture of the beautiful sunset from their front yard . . .

Barb, wow now that's a vegetable garden! Very impressive. Have you all had a lot of rain or does your son have some kind of irrigation system? Love Brody and Mr Meowgee! ♥

Fun name for a kitty! Beautiful first year garden...so impressive! Glad that you were able to take so much produce off their hands. I like the sound of your cucumber salad...yum!

Wow....now that's some garden. I love how you called it the Garden of Eatin! It's nice that Brody and Meowgee have bonded...especially since Meowgee was a stray. Beautiful, just absolutely a beautiful sunset!

Wow, this is a beautiful garden. It looks like a Garden of Eatin. It's a perfect name. Tell our son, I'm very impressed with his garden. Thanks for your recipe. I haven't always liked cucumbers until that last little while and now I love them. Christina helped me on that one.
Oh the photos of that cute grandson Brody and the cat are fun ones. The Sunset photo is spectacular. You really are good at this photo taking thing. Sending lots of love and hugs our way dear friends!
