My Daybook...

FOR TODAY August 1, 2013

Outside my window... This morning it was beautiful, the sky was blue and we had light winds.  This afternoon, the clouds starting rolling in, and the wind picked up...and it's hot!
Last night, around 9:30 or so, the wind started howling - we had sustained winds at about 45-50 mph, for around 20 minutes or so, I thought the trees were going to be blown right over; lots of branches and leaves on the lawn this morning!  We didn't get any rain with that storm, in my area, but lots of lightning.  We have had such a hot summer, with little rain, everything is so dry.  There are quite a few fires burning in Idaho this season...pray for rain!

I am thinking... About getting ready for our annual family camp-out.   It's always so much fun, but really a lot of work to get ready.  We usually go for about a week, give or take a few days for some, and we always have so much fun!  This year, my  husband is going to cook a turkey in a garbage can...should be delicious...and interesting...  :0)

I am thankful... For sweet neighbors.  Last Sunday, my doorbell rang, and when I answered it, there was one of my  neighbors little boys standing there with a note, and a cute little solar butterfly to put in my garden!  The wonderful lady who gave it to me is such a delight in my life, she is the one who is always shining brightly for others!  This is some of what her note said...

"...I love that Heavenly Father lets us grow - brings us the night, but gives us the beautiful bright sun, and surrounds us with the light and beauty of others, so that we can become brighter, and become beautiful lights in the darkness;  lights that others might need to help them find their way, when they feel like they are surrounded by darkness.

 You are a light to those around you.  Thank you for being a source of light for me!"

 It is fun to watch this pretty butterfly change colors at night - so pretty!


In the kitchen...  My daughter gave me a recipe for, Posh Squash.  She said it is really delicious!  I  have lots of summer squash, so this will be in the oven for dinner tonight, along with pork chops and cucumbers and onions!

Posh Squash

2 lb. squash - zucchini, crookneck or patty pan
2 eggs
1 c. mayonaise
1 small onion, finely diced
1/4 c. green pepper
salt and pepper
3/4 c. grated Parmesan cheese
2 Tbl. butter

Cut squash into 1/2 inch slices, cook until tender, 4-5 minutes, drain well.  Beat eggs, then blend in mayo, green pepper, onions.  Stir to blend, add salt and pepper to taste.  Spoon into greased 2 1/2 quart casserole.  Sprinkle evenly with Parmesan cheese and dot with butter.  Bake uncovered in 375 degree oven for 25-30 min., until puffy and golden brown.  
Serves 6-8

I am wearing... Denim capris, a yellow top and my Berks!

I am hoping... That my daughter and her children drive safely coming home from Salt Lake tomorrow.  And that the weather is good while we are camping... ;0)

I am looking forward to... A good nights sleep tonight - any suggestions?!

I am learning... To have patience...such a hard thing for me sometimes.

Around the house... I have been lazy today!  I did get my mother's laundry finished, now I need to work on my own.  I watered my flowers, and gave the dog a bath (yikes!).  Still lots that needs to get done.

I am pondering... I really need to start working on my genealogy.  I am kind of a huge procrastinator!   I get the boxes out, go through them and put them away - I've done that more than once!

One of my favorite things... I love to go to watch my grandkids play sports!  Emily  played T-ball this summer, and she was just adorable -  here are a few fun pictures of her...

A few plans for the rest of the week:

Today - finish laundry, do a little puttering... ;0)
Tomorrow - vacuum, make grocery list, and get things ready in the trailer.
Saturday - More preparing for our camping trip.
Sunday - Church
Monday - grocery shopping, get everything ready to leave on Tuesday morning.

  1. As always, Barb, you do such a good job with your blog posts. You are very engaging. There is something for everybody in this post -- the gardener, the cook, the grandma, the camper, and even the geneology buffs! Love the butterfly and then the dragonfly you managed to capture with your camera! How special is that?! Enjoy your family camping trip!

    I will come back to the Posh Squash recipe once zucchini starts showing up around here!

  8. Hi Barb! Our weather has been the opposite of yours - rainy, humid and really really hot! Usually our temps in the summer are in the low to mid 80's with a good deal of humidity; this year it's been in the low 90's with a whole lot of humidity! I don't think I've ever looked forward to the fall as much as now.

    That gift from your neighbor is so sweet and encouraging. I think little meaningful gifts are worth more than big expensive ones. I treasure the small stuff more.

    Have a lovely camping trip! I'm sure you'll take plenty of pictures. I love seeing your pics - all the mountains and valleys, so different from Florida! God bless y'all!

  9. Hope you have a great time camping. What a fun thing to do. We haven't been camping in several years--it is definitely a lot of hard prep work!

    The dragonfly is so pretty. You do have good neighbors. We have sweet neighbors also and I love when the youngest daughter rings my doorbell with a handmade card or something sweet that her mom made.

    It's good to have lazy days now and again! I hope to have one day. :-)

    If you find a method for a good night's sleep, let me know! I don't sleep well any more and I'm tired of being tired!

  12. It is so fun to have you do a daybook entry. I loved it. I loved the pictures of the flowers and butterfly and of course you have such sweet grandchildren and her picture is adorable.
    We had such a good time with Amber and our grandchildren. I enjoyed every minute of having them. I can't imagine not having fun with Amber she is such a favorite one. Love that girl! Have fun on your family outing; it sounds like such a great event and I wish we could do that one sometime.
