Simple Woman's Daybook . . .


FOR TODAY May 24, 2012

Outside my window... There are lots of dark clouds lurking in my neighborhood!  I think it will be raining off and on all day.  It's also cold, only about 58 degrees outside today!

I am thinking... How much the wind has blown this spring, seriously 30-35 miles per hour . . . all day long yesterday!  It broke  a big branch off  one of my trees in the backyard- the poor thing is getting bare!

I am thankful for... My ancestors, and the opportunity that I have to celebrate their lives and remember them on Memorial Day.  I love this holiday!

From the kitchen...

I made this recipe last night for dinner and it was so good, and very easy!  It's a Paula Deen recipe - of course it's good!  I  served it with a big green salad.

Herb Crusted Pork Tenderloin



 Ingredients
  • 1 (4-pound) boneless pork loin, with fat left on
  • 1 tablespoon salt
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme or 2 teaspoons minced fresh thyme leaves
  • 1 teaspoon dried basil or 2 teaspoons fresh basil leaves
  • 1 teaspoon dried rosemary or 2 teaspoons minced fresh rosemary

Directions

Preheat oven to 475 degrees F.
Place the pork loin on a rack in a roasting pan. Combine the remaining ingredients in a small bowl. With your fingers, massage the mixture onto the pork loin, covering all of the meat and fat.
Roast the pork for 30 minutes, then reduce the heat to 425 degrees F and roast for an additional hour. Test for doneness using an instant-read thermometer. When the internal temperature reaches 155 degrees F, remove the roast from the oven. Allow it to sit for about 20 minutes before carving. It will continue to cook while it rests.

I am wearing... Jeans, sweatshirt and sandals.

I am going... Just got done collecting money for flags.  The Young Women in our church put out flags on each holiday.  Those who want a flag in their  yard pay $25.00 per year; it helps the Young Women go to girls camp! 

I am reading... I just got done reading, "Ghost at Work" by Carolyn Hart.  It was the cutest book about a lady who died and decided that she just needed to keep herself busy.  So she went to the Department of Good Intentions . . . with good intentions . . .  go to the library and check out this book, it's very cute!  I bought it at a thrift store for .50, and it was worth both quarters!

I am hoping... That the weather stays nice for the week-end.

I am hearing... The soft hum of my computer, and the loud buzz of the lawn mower!

Around the house... Very busy today, running here and there, trying to get, this and that done . . . you know that feeling, right?  I'm hoping to get a little housekeeping done before tomorrow.

One of my favorite things...I love working in my yard!

A few plans for the rest of the week:

Today - Clean my house, make bread, fix dinner.
Tomorrow - Take care of a few business transactions, go to the bank and the courthouse .
Saturday - Gone all day decorating graves.
Sunday - Church
Monday - Celebrate my sweet husbands's birthday!!

Hey Barb, that quote is so true, kids make life so much fun! I love Paula Deen's recipes too, especially her dessert recipes. She's a genius!

We have been pounded by rain the past couple of weeks, but it looks like we're getting a reprieve this weekend. I hope so, otherwise we may be celebrating Memorial day in boats, LOL!

Hi Barb, I enjoyed reading your daybook! I always love the quotes you share, you find such good ones. I love the photo you shared, it is so cute!! I was in your lovely state yesterday in Idaho Falls, and it was very windy! We were coming back from a trip to Yellowstone, and were returning our rented trailer. Oh that is a lot of wind...stay grounded now. The cutie pies checking out the new appliances are making me grin. That book does sound intriguing...wonder if I can find it.

I enjoy reading your daybook entries. Makes me think I should get back to doing them. They always made me stop and think about what is going on around me. So glad you're posting. We've also had a lot of wind and it dries things out so quickly. Your pork loin recipe is another one I'm adding to my file. Looks so yummy! The picture of the grandchildren is precious. I especially love your comment about your ancestors. Most people think Memorial Day is only for military but it's for remembering our personal losses also.

This is a busy time of the year and it seems like the Holiday weekends just keep on getting more busy.
The wind has been blowing like crazy here as well..all of my pomegranate blooms have fallen off, so no pomegranates this year!
