A Peek into my Week . . .


Today . . .  October 14, 2015

Something from my Playlist . . . I love, James Taylor, always have, always will.  Yes, My husband knows about my love for this man and his music . . . he's good with it . . . he's like comfort food for my musical soul!




Mother Nature . . . We couldn't ask for better weather here in Idaho!  The high today will be around 74 degrees, just perfect in my opinion,  

On My Mind . . . We've had two new babies born into our family this month - both of them were my sisters new little grands.  You will just have to take my word that they are adorable!!  One of  them was born on Taylor Jo's birthday . . . she was pretty excited!  

My children are done having children, kind of sad for me, but oh my, I do love the little's that I have been blessed with!  My little, Tay-Bug, grew up right before my eyes, isn't she gorgeous!  Before I know it, she will be all grown up, and having her own little's!

 She's giving her dad . . . the look, and he looks pretty intense!

She wanted apple pie instead of birthday cake . . . great choice, it was delish!!

Comfort from the Kitchen . . . 


These oven baked tacos are so delicious!  I was a little skeptical, because I'm "old school", when it comes to my tacos, but these tacos hit the spot every time!  Give these a try, they are easy to put together and so yummy. 


Oven Baked Tacos

1 lb. ground beef or ground turkey
12 hard taco shells
1 pkg. taco seasoning - any brand, or your own homemade mix
8 oz. tomato sauce
1 can of black beans or pinto beans - drained and rinsed
1 -  4oz. can diced green chilies
1 1/2 cup Colby Jack or cheddar cheese, shredded

Brown the ground beef or ground turkey.  Stir in taco seasoning, green chilies, tomato sauce and beans.  Arrange taco shells in a 9x13 baking pan or casserole dish.  Spoon mixture into each shell.  Top each taco with shredded cheese.  Bake for 10 minutes in a 400 degree, pre-heated oven for 10 minutes or until cheese is melted.

Garnish with tomato, lettuce. black olives, chopped onion, jalapenos, sour cream, guacamole, etc.

This recipe can be doubled or tripled!

She is beautiful! And apple pie is a good substitute for birthday cake, almost as good as blueberry pie. Say, who stole a piece of her pie before she had a chance to blow out the candle? =D

Love your music! The weather was lovely here today and we went on a little picnic. It was a fun break from the studying we are doing before we go into the MTC. Congrats on those new babies in the family.
Oh, how I love that girl of ours; she is so beautiful. Of course, I love that man too! Tay's Grandpa W. says that apple pie for a birthday dessert is an awesome choice. Sending lots of love and hugs your way dear friend.

I love James Taylor, too. I think Fire and Rain is still my favorite. I actually like the idea of having pie instead of cake for a birthday. Apple pie is the best, too, especially with a big scoop of vanilla ice-cream on top.

Oh and happy birthday to your pretty granddaughter... :)

I love your Meme - so true. My son said that is one of the first things they taught the missionaries at the MTC! I love these oven baked tacos - they look so good. Will have to try them. Easy too! Have a great weekend!
