My Daybook . . .

Welcome to...
So sorry about my post!  I'm not sure what happened to it, (most likely it's because I don't do this enough!).  Anyway, here it is!
FOR TODAY - January 30, 2014
Outside my window...We got a little bit of snow on Wednesday, so it is white outside!  It is also drippy, as the temp is 40 degrees!  My poor dog is so scared of the snow that falls off of the roof, that he spends his day downstairs, poor guy.  It's suppose to snow or rain the rest of the week, and we need the moisture so desperately that we will take it in any form! 

I am thinking...How proud I am of my mom, she is the resident of the month at the retirement center she lives in!  I love this wonderful woman!  She certainly deserves to be recognized and honored!  She will be 86 in March, can you believe it, she really looks so young and beautiful!

I am thankful... You know, it seems like there is so much trouble in the world, so much turmoil,  hatred and wickedness.  I'm just so thankful that I live here, in this beautiful place, where those things sometimes, seem very far away...

In the kitchen... I haven't really been making anything new and wonderful, that said, I will share my caramel corn recipe, I've been making it for over 40 years, and we all love it!
Homemade Caramel Popcorn Recipe:
Ingredients:
1 pound brown sugar
14 ounce can sweetened condensed milk
1 cup Karo syrup (light corn syrup)
1/2 cup butter
1 cup of unpopped popcorn
Directions:
Pop your popcorn in an air popper machine. My machine only allows 1/2 cup of kernels at a time so I had two separate batches that I had to pop.
Cook the brown sugar, Karo syrup, and 1/2 cup of butter over the stove on medium high heat and bring to a boil. Add the sweetened condensed milk. Stir continually for about 3 to 4 minutes until it gets to the soft ball stage (it clings together when you drop some in cold water).  It will burn if you cook it too long, so make sure you are stirring continuously and watch it closely.
When it is finished cooking, take your pot off the stove and pour the caramel sauce over your air popped popcorn. Mix until all the popcorn is completely coated. You will need a very large bowl to mix it all together!

2 cups of unpopped popcorn (1 cup if you like it extra gooey).

Pop your popcorn in an air popper machine, on the stove or, I usually pop it in my Stir-Crazy, using one cup per batch.  I pop two batches, this recipe  makes a lot of caramel!

Cook the brown sugar, Karo syrup, and 1/2 cup of butter over the stove on medium high heat and bring to a boil.  Boil for 3-4 minutes. It will burn if you cook it too long, so make sure you are stirring continuously and watch it closely. Add the sweetened condensed milk and stir until nice and smooth and combined.

When it is finished cooking, take your pot off the stove and pour the caramel sauce over your popped popcorn. Mix until all the popcorn is completely coated. You will need a very large bowl to mix it all together - I usually use two bowls!
I am wearing... Jeans, and a brown fleece top.

I am creating... I would like to crochet an afghan for my granddaughter who will be turning 8 in March - do you think I have time?

I am going... My husbands uncle passed away and his funeral is on Saturday.  Always a sad day, he was the last of my husbands, father's immediate family.

I am hoping...That my little Clara will start feeling better.  She has a disorder that prevents her small intestine from absorbing iron - she is very anemic.  She will be having an an intravenous iron injection next week, and we are praying it will help her.  Please keep her in your prayers.


I am learning... That babies grow quickly!  Actually I've known that for years...  ;0)  But, I can't believe how fast our little Tanner has grown, he's 3 months old, and oh, so cute!


Around the house... The usual puttering, I'm really good at that, I should be a professional!

One of my favorite things... I really love old buttons.  When I was a child, my grandmother used to give me her button box to play with.  She was a school teacher, and it was all about learning!

There you are! I'm glad I checked back and got to see your sweet mother and your beautiful grands. I will lift up Clara in prayer. I'm sorry about your husband's uncle. I took my sweet aunt who is 87 to lunch today and I can see that she is failing fast. It's hard to see them like this, harder still to lose them.

Your mom is a lovely lady. Saying a prayer for little Clara. My goodness that is a challenge to be coped with. So many ofvthe little ones have something or somethings. Tanner is one happy baby! Really adorable.

Good to see you blogging again. I will go back and see what I have missed. Lots I am sure.

Hope that the moisture coming your way is gentle and steady and that it goes deep down without running off anywhere.

Hi Barb, so gald I got to read your Daybook, how wonderful to see you blogging again. I will be praying for little Clara, your Mom is so lovely, she and my mother are the same in age, we are so blessed to have them both still with us. I cherish the time I spend with her. Love the quote, so true.
I am sorry to hear about your husband's uncle my dh got a call today his aunt passed this afternoon, she had been sick for quite awhile!
Your grandchildre are precious, and yes they do grow way to fast.

I really love when you do a day book entry. We will keep little Clara in our prayers. I always feel sad when little ones are not feeling well.
Your mother is so lovely and I love the picture with the great grand baby; priceless. Tell Bob we are sad about his Uncle's passing.
The pictures of your sweet grandchildren and the dog are awesome ones. You know these grandchildren of ours are going up way too fast. We need to treasure our moments with them.
I don't when we will get a moment to see you too; but I hope sooner than later. Last trip was a fast one as they usually are but great to be with the kids. Little Haven is a precious one.
Just know I love you both a ton and blessings to you! PS, thanks for the caramel corn recipe; Roger will love it.

I knew all of these thing before I read your post, but the way you write always keeps me interested! :) I love that recipe and it reminds me of the MANY years we made this as a child and the MANY times I have made it for my children. LOVE IT!!! Love the pics of the kiddos and Mr. Cole-man, gotta love him too!

Congratulations to your sweet mom... I'm glad that there are these kind of things for the aging. Makes life fun for them. I can't believe how much little Tanner boy has grown. so much fun when they start smiling and getting their own personality. Most definitely will be praying for Clara.
