Simple Woman's Daybook . . .



FOR TODAY April 24, 2012

Outside my window... It's warm, but cloudy with a chance of some rain.  We have been really warm here - yesterday, it was 27 degrees above average for this time of year!

I am thinking... About my poor husbands shoulder.   It's so sore, swollen and bruised.  I'll be happy when he's not in so much pain . . . poor guy. . . :0(

I am thankful for... Good surgeons and therapists!

From the kitchen...

Last week I made these wonderful Oatmeal Chocolate Squares - they were very delicious . . . and not on my diet!

Oatmeal Chocolate Bars

Mix together and set aside:
1 c. soft butter
2 c. brown sugar
2 eggs
2 tsp. vanilla
2 1/2 c. flour
1 tsp. soda
1 c. oatmeal
1 tsp. salt

Press 3/4 of the oatmeal mixture  into an ungreased 9x13 baking pan.  Set aside.

 Melt together:

1 (12 oz.) pkg. chocolate chips (milk or semi-sweet)
2 Tbls. butter
1 can sweetened condensed milk
1 tsp. vanilla
(I usually just heat up the sweetened condensed milk and add the chocolate chips, then mix until just some of the chips are melted - I like a few chunks of chocolate!)

Spread this mixture over the oatmeal mixture in the pan.  Sprinkle rest of oatmeal mixture over the top.  Bake at 350 degrees for 25-30 minutes or until the top is set.

These cookies freeze well - I just let them cool, then layer between wax paper in a sealed container - they will freeze for up to two months!

 I am wearing... Jeans and a pink t-shirt - barefoot - at last!!

I am creating... Nothing right now - although I did finish painting the downstairs bathroom!  

I am going... To go and make chocolate flowers with some of the most wonderful young women tonight!

I am reading... Shadows of Brierley, by Anita Stansfield.  It's a pretty good read!

I am hoping... That we get some rain.  We were in the hills today, and they are sooooo dry!

I am hearing... Thunder . . . yeah!

Around the house... I was really lazy today - we were gone most of the day, but I did manage to get a load of laundry done!

One of my favorite things... Watching lightning - maybe we'll get some tonight!

A few plans for the rest of the week:

Tomorrow - lunch with mom and sister
Thursday - go help my daughter organize and hang some pictures in her new home
Friday - therapy with my husband
Saturday - we'll see what the day looks like!
Sunday - church

Here is picture for thought I am sharing...  This little squirrel was having such a good time eating the pine cones in my front yard the other day!  I wish I could show you how big (like the size of a small cat) she was, and she was soooo fat, and had a really short little tail!

My little Bear would love to make that squirrel's acquaintance! Your chocolate oat bars look so delicious. Thank you for sharing your recipe with us. And I hope you take a picture of the chocolate flowers! I've never seen one.

Hi Barb....did I miss out on knowing what kind of surgery your husband had? Was it a torn rotator cuff? I am having some issues with my shoulder and arm..suppose to start therapy next week.
Girl...those chocolate oat bars are calling my name, and NO..they are not on my diet either!!
Hope you all do get the rain that you need. How about all these warmer than average temps?
Hope you have a sweet week and I hope your husbands shoulder heals very quickly..

What a cute lil squirel. We don't have them here in Aus. Those choccie squares look like they would go down a treat with a nice hot cuppa. Hope that your husband is on the med soon. Much love sent your way as always.

Hi Barb, sorry to hear your hubby's suffering with shoulder pain. Sure hope he heals quickly.

The chocolate bars are not on my diet, either, but they sure look and sound good!

I love to watch the squirrels. Your photos are cute!

We're supposed to get rain here in the next day or so, but we don't really need it. It's been a beautiful spring thus far. I'm enjoying it now because I'm just sure we'll have a very hot and humid summer!

Loved reading your Daybook. Hope hubby is better soon. It makes you feel so helpless when a another person is suffering. Copied your recipe for the oatmeal squares. Looking yummy! Love your squirrel too! Hugz!

I enjoyed reading your daybook! I hope that your husband's shoulder is soon feeling better. I will be praying for him. Cute photos of the squirrel! I love to watch lightning, and hear thunder too...as long as I'm safe inside my house. :) It's raining here too, today and tomorrow. I'm going to try your Oatmeal Chocolate Bars, they looks so good!
