Simple Woman's Daybook . . .

FOR TODAY November 2, 2011

Outside my window... Right now it's just beautiful, not a cloud in the sky, the sun is shining . . . but, it's very cold!  This morning when I sent my husband off to work, it was a bone chilling 15 degrees!

I am thinking... About my sweet blogging friends, how wonderful you all are, and what blessings you all are in my life.

I am thankful for... The simple things in life - clothes, food and a warm home.  I know that there are so many in the world who don't even have the basic necessities of life - I'm so thankful for mine.

From the kitchen... 


BAKED EGG ROLLS

Ingredients

2 cups coleslaw mix
1 can (14 ounces) bean sprouts, drained
¼ cup chopped green onions
1 garlic clove, minced
2 tsp. grated ginger or ½ tsp. powdered ginger
2 cups finely diced cooked chicken, cooked ground pork or cooked ground beef
4 teaspoons cornstarch
1 tablespoon water
1 tablespoon light soy sauce
1 teaspoon canola oil
1 teaspoon brown sugar
Pinch cayenne pepper
16 egg roll wrapper

Directions

Coat a large skillet with cooking spray; add the first four ingredients. Cook and stir over medium heat until vegetable are crisp-tender, about 3 minutes. Add meat; heat through.  

In a small bowl, combine the cornstarch, water, soy sauce, oil, brown sugar and cayenne until smooth; stir into chicken mixture. Bring to a boil. Cook and stir for 2 minutes or until thickened; remove from the heat. 

Spoon ¼ cup of chicken mixture on the bottom third of one egg roll wrapper; fold sides toward center and roll tightly. (Keep remaining wrappers covered with a damp paper towel until ready to use.) Place seam side down on a baking sheet coated with cooking spray. Spray tops of egg rolls with cooking spray. Bake at 425° for 10-15 minutes or until lightly browned. Yield: 8 servings.  Serve with sweet and sour sauce, yummy!

 
I am wearing... Blue pants, and floral shirt under a burgundy sweater, socks and my favorite shoes - Merrill Barefoots!  No, I do not work for them - but I love these shoes!

I am going... To go have lunch with my two sisters and my mother!  My sister is still home recovering from her hip replacement, so we are bringing lunch to her today!

I am reading... Anything on organization!

I am hearing... Both of my husbands cell phones, beeping and buzzing like crazy!  He forgot to bring them to work today . . . oops!

Around the house... The usual cleaning - I think dust bunnies really do multiply!

One of my favorite things... Crisp red apples, straight from the tree!

A few plans for the rest of the week:

Tonight - winterizing the trailer
Thursday - make apple pie filling for the freezer and a batch of apple sauce
Friday - ?
Saturday - odds and ends in the yard with hubby.
Sunday - church

You are so organized and I love it....sounds like your week is moving along pretty smooth and this is such a blessing...
We grow lots of apple trees at the nursery, but no fruit! :(

Hi Barb, it's raining as I write this and I'm loving the sound of it because it's needed so badly. I know colder weather is coming here, but 15 degrees! Yikes, I'm not ready for that...I'm such a wuss! :D
You and I think alike sometimes! Just today I bought some things to hopefully help me get more organized. At least in the paperwork dept. I'm the worst at just stuffing things here and there and then having to spend a day finding something when I need it!

Love the scripture, that is one I've been thinking about lately! How do you read my mind? Ha! Anyway, I've been thinking that my thoughts have been a tad bit negative lately, and I need to change that!

Darling picture of sweet Averi! I very much enjoyed ( although I read through it tears) reading her story her grandma LeAnn wrote. What a special child who has such very dedicated grandparents and parents in her life.
The egg rolls look yummy. I hope you are enjoying every moment you can with your mom. We are both so blessed to have them still in our lives.:)

The sun is out here too. I don't know how cold it is because I haven't stuck my head out yet. The sky is a beautiful blue though. If you find any good organizing tips please share. I always like to find new ways to organize. My dd gave me some apples she got from a grower and they are so good and crisp, Braeburn and Lady Apple. Enjoy your lunch.

15 degrees! Oh my! I don't know if I can take that kind of weather anymore! We start breaking out parkas when the temps hit the 50's, LOL!!

That scripture is one the Lord has been putting in front of me repeatedly lately. He's reminding me where my thoughts need to be. I better be listening!

Have a lovely time with your mom and sisters. What a sweet thing to do for your sister, to bring her lunch and loved ones as she recovers from her surgery! Have a blessed day.

Wow but you are being COLD out that way!!! W-O-W! No wonder you don't get out much, in wintertime. Well, we don't regularly get that cold here, but I still don't get out much in wintertime!!! :-)

I have a pair of Merrill shoes to that are SO comfortable! Love them!

My family loves your ham and bean soup recipe and I am going to be brave and try this recipe too. I do have one small question: What are egg roll wrappers made of?
