Simple Woman's Daybook . . .


FOR TODAY - July 27, 2010

Outside my window... Another beautiful day here in Idaho!  Right now the sky is blue with little wispy clouds floating around here and there.  The wind is blowing, but just enough to cool things off a tad.  Summer will be gone before we know it - I need to enjoy it while I can.

I am thinking... That even though I feel so much better than I did last week, I'm still kind of tired.  I think I'll take my time packing - just a few things at a time.  

I'm also thinking about my beautiful little great-nephew.  I had the awesome opportunity to meet him yesterday - he's not even a week old yet!  Children are such a wonderful gift, sent to us from a loving Heavenly Father!  He is absolutely adorable - congratulations to his adoring family!

I am thankful for... My health - as I have been recovering from this simple surgery, I can't help but think of all those who have major health problems and suffer from diseases that they have no control over.  I am thankful for the good health that I have been blessed with. 

A scripture I  want to share...   

"If ye keep my commandments, ye shall abide in my love; even as I have kept my Father's commandments, and abide in his love.  These things have I spoken unto you, that my joy might remain in you, and that your joy might be full."  ~ John 15: 10-11

We all have this promise.  Nobody can predict what will be asked of us as individuals.  So far, I've led a fairly ordinary life.  Looking back at my trials, I can say that I have had a few, some bigger than others.  But through those trials,  and whatever may be asked of me in the days of my life to come, I know I have felt and will feel Christ's love as my shield and support, as long as I don't distance myself from Him by disobedience.  He will always be there,  it's up to me if I will be. 

From the kitchen... I think I will make banana bread to take camping!

Whole Wheat Banana Bread

½ cup butter
½ cup packed light or dark brown sugar
¾ teaspoon baking soda
½ teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 teaspoon vanilla extract
1 ½ cups mashed ripe banana (3-4 medium to large bananas)
¼ cup honey (I used sugar – works fine)
2 large eggs
2 cups (8 ounces) whole wheat flour, traditional or white whole wheat.  I like to weigh my whole wheat flour, some are heavier than others.

Preheat oven to 350 F degrees. Lightly grease a 9 x 5 inch loaf pan.

Beat together the butter, sugar, baking soda, salt, cinnamon, nutmeg and vanilla in a medium bowl until smooth. Add the banana, honey and eggs, beating until smooth. Add the flour and nuts, stirring until smooth. Spoon the batter into the prepared pan and let it rest at room temperature, uncovered for 10 minutes.

Bake the bread for 50 minutes. Lay a piece of foil gently across the top and bake until a toothpick inserted into the center comes out clean.  Remove the bread from the oven and allow it to cool for 10 minutes before turning it out of the pan onto a rack to cool completely.

I am wearing... Denim capris and a flowered shirt - barefoot!

I am creating... Not much right now, really, I'm very non-creative right now!

I am going... To get my list organized and start loading the trailer!

I am hoping... So many things I am hoping for, I can't even list them.  Not material things, just hopes and dreams of a middle-aged wife, mother and grandmother.

I am hearing... The business of a summer afternoon - cars going by, birds singing, wind blowing, tractors going down the road, airplanes, music . . .

Around the house...  I am trying to get my housework done and get my laundry finished so that I can start packing.  It seems like things just go smoother if I am organized and my house is clean, don't you think that is true for most of us?

One of my favorite things... The smell of petunias!

A lovely daybook! I'm so glad that you are feeling better...good health is something to always be thankful for. I hope that you have a very fun time with your family on your camping trip! Enjoy! :)

Take it easy, enjoy what is left of our short summer, and don't worry too much about the house work. You have all winter to do it. Hope you feel 100% soon. Hugs back. Oh, my daughter, her friend and son, and friend's niece and nephew are headed to IF as we speak. (Returning niece to parents after a visit with the rest of the family.)
